This classic dessert is timeless piece. The sweet crust base with almond running throughout, and the sharp tasting raspberry jam combined sets the tone. Made with Frangipane, which makes the filling light and fluffy. The tart serves 6-8 people

This is a usually a traditional Black Cake known throughout the Caribbean. I have turned this cake into Cupcakes! With Butter Rum frosting. The fruit is marinated in alcohol for months in advanced. With all the alcohol and spices these cupcakes aren’t for faint hearted! For mature adults only! This recipe for my Apple Crisp is my own; I have seen others but didn’t like the look of them! If you love apple crumble as much as I do, then you’ll love my apple crisp! An oat crumble topping with spices, a thin layer of apple in the centre and the base is more crumble! Reminds me of a flapjack in away. This Apple Crisp is made in a 6-inch foil container. Apple Crisp starts at £20 serves roughly 4 – 6 people.

These moist and chocolaty brownies are full of flavour and coconut. You can’t taste the beetroot, but they keep the brownie nice and moist. This classic dessert is rich in layers of Chantilly Cream, Madeira sponge, Disaronno Liqueur, white chocolate, amaretto biscuits and strawberries. Lorraine Pascal inspired this trifle, as she has her own recipe. Large bowls feed up to 12 people but I also do individual bowls.

This cake is a classic vanilla sponge. Can be made to order less spice or more the better! (Cinnamon, nutmeg and cloves.) I can also use alternative ingredients to suit your dietary needs. Cornmeal also known as Polenta works really well and gives it a great texture. Give it a try!
